This glittering sparkling is a dry, aperitif style, offering vibrant freshness. Grown on site and made completely at Moorilla, the four years on lees have our chardonnay, pinot noir and yeast characters in balance. The mousse is creamy and flavours are long. As the wine matures and gains richness, vanilla, nut and stone fruit flavours will deepen whilst the natural acidity preserves balance and harmony. This is the classical style that made Champagne and caviar the perfect match. Cellar 20+ years.

Technical Details

As an aperitif style, this wine offers wonderful freshness when young or will cellar very well. With 4 years on lees, there is finesse and elegance throughout. A very structural wine, the dosage is kept to a minimum in order to balance acidity and a chalky astringency with creaminess. In youth, the fruit is subtle and complex; pear and apple combine with integrated baked bread and biscuit. As the wine matures the colour will develop gradually and flavours will lengthen and develop into more toasty aromas along with vanilla, nut and stone fruit flavours. The fruit was sourced from the Moorilla owned and operated St. Matthias vineyard, north-east facing on the West Bank of the Tamar River and from a contract vigneron who grows sparkling fruit for us in Winkleigh, a cooler and higher altitude site a few kilometres inland from the Tamar River. Both are typically low yielding sites. The fruit was handpicked when flavour and acid profiles were considered optimal.

A traditional method 55/45% blend of chardonnay and pinot noir, tiraged Nov 08, disgorged Dec 12, the disgorging liquor made up from hand-disgorged 04 Brut retained on lees. That dosage was only 4g/l, leaving the wine brisk and chiselled, lemon fruit to the fore. — 2014, James Halliday, 2015 Halliday Wine Companion
