Grown on site and made completely at Moorilla, the four years on lees have our chardonnay, pinot noir and yeast characters in balance. The mousse is creamy and flavours are long. As the wine matures and gains richness, vanilla, nut and stone fruit flavours will deepen whilst the natural acidity preserves balance and harmony. A traditional method 55/45% blend of chardonnay and pinot noir, tiraged Nov 08, disgorged Dec 12, the disgorging liquor made up from hand-disgorged 04 Brut retained on lees.
