A traditional expression of Tasmanian Pinot gris that is picked when perfumed aromas dominate, this wine was fermented dry. The fine and delicate texture shows deft handling of skin contact, lees stirring and maturation in older French barriques. An intense bouquet of spiced pear, honeysuckle, brioche, vanilla pod and nutmeg carries to the palate. A funky complexity on the nose and palate is derived from a partial wild ferment in French barriques. Lees stirring and maturation in barriques has provided a medium body, silky texture and savoury flavours which build when tight acidity provides a refreshing finish. A perfect aperitif.

Technical Details

Early in its life, the increased percentage of wild fermentation in the 2009 release gave me more wild character in the wine than I was looking for. Having spent time bottle maturing the impact lessened and I thought I could actually try a bit more barrel fermentation and wild yeast use. However the yeast used in the inoculated barrel components, while suited to tank ferment, were not ideally suited to the barrel fermentation conditions. I trialled three yeasts that I had come to prefer for our use in Chardonnay, two of which will be used again next year. The yeasts were preferred not for their aromatic or flavour contribution, but as in the Chardonnay, texture and mouth feel. The fruit was sourced from Martin Block, a vineyard adjacent to our St Matthias vineyard for which we currently hold a long-term management lease. It is north-east facing on the West Bank of the Tamar River. This site has been showing low-yielding trends, typical of what we see on our own properties. The fruit was left on the vine until flavour profiles showed an increase in perfume and floral characters before hand-picking. Tasmania saw fairly average yields in 2010 and fruit quality was some of the best of the season. Our warm summer turned wet and we utilised heavy fruit selection in the vineyard to nullify the impact of botrytis. Harvest was slightly earlier than 2008.
