This powerful vintage offers fragrant lychees, rosewater and musk that meld with a weighty body and linger long. Fragrant lychees, lime, musk and rosewater aromas are supported by notes of nuts and apples. The weighty palate shows classical flavours, a full body and viscous texture. For Conor, the goal is to achieve a balance between acidity, lees weight and alcohol viscosity. Rosewater and spice flavours linger long. Match with char siu or roast pork with apple sauce

Technical Details

Since my first releases of this varietal, which in my opinion is most terroir-driven of all the white grapes, I have worked to make a dry wine that would highlight spice and texture rather than upfront fruit, all while remaining very delicate. The late onset of spice flavours and aromas as is normal means again this wine has high alcohol and as such is made to drink with food. The fruit was left on the vine until flavour profiles showed an increase in perfume and floral characters before it was hand-picked. The season, due to above average yields delayed the onset of spice characters in the south. As such, alcohol is higher than we have had in the past. This was exacerbated by hen and chicken which caused difficulties in getting large berries ripe before the tiny berries shrivelled.
