Crafted to sit between a typical Sauvignon blanc and a Fumé blanc, this is a restrained, elegant and complex expression of Moorilla terroir. It is a combination of grape, yeast and oak character and is simply called Sauvignon. Harvested three times, the lime, floral, lemongrass, passionfruit and herbaceous aromas and flavours are balanced and restrained. They are complimented by restrained wild yeast, fine tannins, steely minerality, a touch of vanilla bean and beautiful natural acidity. Great for enjoying immediately or cellaring, it matches well with food.

Technical Details

As with previous releases, this wine was made to sit somewhere in-between a typical Sauvignon blanc and a Fumé blanc and is simply called Sauvignon. Much effort was placed into making a wine that was interesting, funky and complex while remaining approachable. The wine is a blend of numerous batches of stainless steel fermented and wild barrel fermented wines. Compared with the 2009 release, this wine shows a slight increase in the use of barrel fermentation and wild yeast. This was done to provide more complexity and more palate weight. All fruit used in this wine was sourced from Moorilla owned St Matthias vineyard (West Bank, Tamar River) and the adjacent Moorilla managed Martins block. Both parcels this year cropped at an average yield despite the difficult season. The fruit picked at different levels of ripeness to give a range in aromas and flavours between the various clones of our top block.
