Crafted to sit between a typical Sauvignon blanc and a Fumé blanc, this is a restrained, elegant and complex expression of Moorilla terroir. It is a combination of grape, yeast and oak character and is simply called Sauvignon. Harvested three times, the lime, floral, lemongrass, passionfruit and herbaceous aromas and flavours are balanced and restrained. They are complimented by restrained wild yeast, fine tannins, steely minerality, a touch of vanilla bean and beautiful natural acidity. Great for enjoying immediately or cellaring, it matches well with food.
