Our best Sauvignon yet is a restrained, elegant and complex expression of our terroir. Pristine fruit was handpicked on three separate occasions for optimum complexity and natural balance, and crafted in the Bordeaux tradition. Reserved floral, passionfruit and herbaceous aromas are complimented by earthy, subtle, oak and lemon notes. Funky flavours marry weight; and fine texture and minerality is revealed throughout. This style suits a long table lunch. Cellar 5-8 years.

Technical Details

As with previous releases, as this wine was made to sit somewhere in-between a typical Sauvignon blanc and a Fumé blanc it is simply called Sauvignon. Much effort was placed into making a wine that was interesting, funky and complex while remaining approachable. The wine is a blend of numerous batches of stainless steel fermented and barrel fermented wines. With a better growing season in 2012 compared to the risks of 2011, this wine has returned to a high percentage of wild yeast fermentations. All fruit used in this wine was sourced from Moorilla owned St Matthias vineyard (West Bank, Tamar River).
