This is hand-picked, vinified and bottled at Moorilla. The style suits those who prefer subtlety and complexity and a light, dry aperitif matched with food or cellared for a special occasion. The nose is composed of toasted brioche, apples, vanilla bean, lemon blossom and the ocean breeze. The trinity of Chardonnay, Pinot noir and developed yeast character deliver complex flavours, a light palate, creamy mousse, chalky tannins, outstanding length and great cellaring potential. Disgorging liqueur was made up from hand disgorged 04 brut that has been kept on lees. 79% Chardonnay, 21% Pinot noir.

Technical Details

An aperitif style with 4 years on lees this wine has both finesse and elegance. This is quite a structural wine in that the dosage has been kept to a minimum in order to balance acidity with chalky astringency with a mid-palate creaminess. In youth, you'll find the wine has remained surprisingly fresh with alluring subtlety and complexity; pear and apple combine with integrated baked bread and biscuit. However, this wine has been produced with the aim of long term cellaring and as it matures the colour will develop gradually and flavours will lengthen and develop into more toasty aromas along with vanilla, nut and stone fruit flavours. The fruit was sourced from the Moorilla owned and operated St. Matthias vineyard, north-east facing on the West Bank of the Tamar River and from a contract vigneron who has been growing sparkling fruit for us in Winkleigh for many years. This site is a cooler and higher altitude site a few kilometres inland from the Tamar River. Both are typically low yielding sites. The fruit was handpicked when flavour and acid profiles were considered optimal. Note that the 2010 season was warmer than 2009 and harvest was again at a more normal time.
