Our 2010 vintage is a celebration of complexity and subtlety. We balance the pressings of our sparkling juice by adding a barrel of Pinot noir to the base wine. It adds an extra layer of complexity, berry flavours and an elegant salmon pink blush to the chardonnay platform. The bouquet and palate offer fresh berries, quince, apples, lime, wood-fired brioche and hints of minerals and hazelnuts. The creamy mousse is full and creamy, framed by chalky tannins and supported by tingling acid which lingers longs. This wine is an excellent proposition for collectors.

Technical Details

Our Rosé sparkling is an intriguing dark salmon-pink. With more than four years on lees, the aperitif style offers a complex bouquet composed of freshly baked biscuits and brioche, perfumed floral, spice, strawberry and quince aromas. The palate is long, creamy and elegant yet tremendously focussed and balanced. As the wine matures spice, mineral, nut and stone fruit flavours will develop increasing richness and softness whilst the vibrant natural acidity preserves balance and harmony. The fruit was sourced from the Moorilla owned and operated St. Matthias vineyard, north-east facing on the West Bank of the Tamar River and from a contract vigneron who has been growing sparkling fruit for us in Winkleigh for many years. This site is a cooler and higher altitude site a few kilometres inland from the Tamar River. Both are typically low yielding sites. The fruit was handpicked when flavour and acid profiles were considered optimal. Note that the cool 2009 season resulted in a harvest 17 days later than 2008.
