This dry style offers a bouquet of pristine lychees, rosewater and musk, fine texture and traditional balance. Particular attention is paid to tasting the grapes on the vine and hand-picking them when spice and floral flavours are at their peak. All juice was fermented wild, on skins until balance was achieved with the vibrant natural acid and low alcohol levels of the 2012. Intensely pure and fragrant lychee, musk and rosewater aromas are complemented by lime notes. The dry palate shows varietal, nut and mineral flavours. A full body and textural finesse marry the strong structure. Rosewater and spice build on the finish with fresh acidity. Only 225 litres were hand- pressed to old barriques where maturation and integration took place, on lees over 3 months.
