This truly Tasmanian wine is one of natural finesse. It has been made to sit in-between a typical Sauvignon blanc and a Fumé blanc. Funky, approachable, complex and elegant, it is simply called Sauvignon. Harvested three times, the lime, floral, lemongrass, passionfruit and herbaceous aromas and flavours are balanced and restrained. They are complimented by restrained wild yeast, fine tannins, steely minerality, a touch of vanilla bean and beautiful natural acidity. Great for enjoying immediately or cellaring, it matches well with food.
