The 2013 Muse Sauvignon is a single vineyard artisanal wine which will cellar well. Grapes are hand-picked on three separate occasions to harness lively acidity, a complexity of aromas and flavours and ripe tannins. Two thirds are then fermented wild, after extended skin contact, in oak and matured in 1500 litre French oak foudres. Apple blossoms, lemongrass, wild yeast, minerals and cedar inhabit the bouquet. There are apples, cool mint, gun flint, funk and lees on the palate which is medium bodied and long. Drink 2014-2021 with goat’s cheese, fresh tomatoes and herbs.
