Acholado—Vine Spirit

Acholado is Moorilla’s white spirit — distilled from estate white wines and blended across five vintages.

Inspired by the South American Acholado style (meaning “blended”), this is its Australian counterpart: column-distilled for purity, bright with citrus and shaped by the aromatics of our base wines.

Unaged and expressive, Acholado offers clarity, lift and versatility — designed for sipping neat, over ice, or as the base of citrus-forward cocktails.

20 to 30+ years if kept in a cool, dark place.

Winemaker Notes

Since 2018 we have collected the combination of Moorilla and Domaine A white juice lees for fermentation. The resulting wine from each vintage is pot distilled with the hearts being taken for the Domaine A Campaniac, the left over fores and feints still have great aromatics and plenty of ethanol. Instead of wasting that spirit we have been maturing them in stainless steel. This has been to preserve their freshness and bright aromatics. They were then diluted to lower the concentration of the spirit so that we would be better able to discern where along the column we wanted to capture the distillate. Tasting at the column allowed us to find the perfect combination of mouthfeel and aromatics. Then over a slow 3 days the spirit was triple distilled in order to get the purest white brandy we could.
