Sparkling Riesling 2025
Soft, pretty and straw-toned in the glass, Praxis Sparkling Riesling 2025 opens with aromatics of lemon sherbet, rosehip and quince paste, layered with crunchy green apple, mandarin rind and gentle florals. The palate is lively and refreshing, driven by bright citrus acidity and fine, creamy bubbles. Preserved lemon, honeydew, almond blossom and candied pear are offset with a crisp, dry finish.

Winemaker Notes
St Matthias vineyard mainly produces Riesling that has more intense tropical fruit characters that are better suited for earlier drinking. To differentiate between Muse and Praxis we have made our fruitier Riesling as a traditional method sparkling wine. With a target of only 6 months on lees we aim to provide mouthfeel, rather than obvious autolytic characters so the wine has remained very aromatic with lots of forward fruit. It’s one of our few wines with some residual sugar—used only for mouthfeel—and is a great aperitif. Due to incredibly low yielding years purchased fruit from a few kilometres down river of St Matthias was used and complimented our own fruit nicely.
