From a warm Tasmanian summer emerges a wine overflowing with fresh tropical fruits. Guava, passionfruit, white flowers, blackberries, red apples, lemons and limes are framed by French oak. On the palate, the wine is architectural: a light, bright entry, silky textures, tall slender tannins and the fine detail of our trademark acidity. It’s intense, long and elegant with a cleansing finish. Cellar for another six years and reserve for a very long lunch.

Technical Details

As with previous , I’ve made this wine to sit somewhere in-between a typical Sauvignon blanc and a Fumé blanc, therefore, it is simply called Sauvignon. Much effort is always placed into making a wine that is interesting, funky and complex while remaining approachable. Texture and structure are paramount. The wine is a blend of several batches of stainless steel fermented but mostly barrel fermented wines. 2016 is typified by having been a very dry and hot season with very high yields. Also, it’s our earliest vintage with Sauvignon blanc being picked between 3 and 4 weeks earlier than average. Despite the heat I think we maintained our fruit quality primarily due to us having identified the need to pick based on acidity and not sugar.
