Shy at release, the nose is composed of toffee apples, toasted brioche, berries, and a hint of an ocean breeze. It is a trinity at work; the Chardonnay, Pinot noir and developed yeast character deliver complex flavours, a light palate, creamy mousse, chalky tannins and outstanding length. Its bold acidity and citrus flavours match with fresh seafood or cold smoked salmon when young.
